This saucepan has a mirror finish for a classic look. The aluminum encapsulated base heats quickly and spreads heat evenly, eliminating hot spots. The stainless steel cooking surface does not discolor, react with food or alter flavors, making this saucepan great for classic cooking techniques like slow simmers, rolling boils and reduction of liquids. The solid stainless steel riveted handle stays cool on the stovetop, and a helper handle provides extra support and balance when lifting and pouring. Cuisinart® 3-Quart Saucepan with Cover
I bought several pieces from this line of products maybe 5-6 years ago. I needed another saucepan and ordered the 7193-20 saucepan as an extra. Much to my surprise, the piece, including the cover, is a good 30-40% lighter than the very same model number I bought years ago. The copper heat disk on the bottom is half the thickness and the whole pan is thinner. I have read many, many bad reviews about several Cuisinart products within the last year or so, so I am convinced that after building a good reputation for their revolutionary food processor, they are both selling their name for inferior products and cutting corners on their own products. It's a disappointment. I'm pretty satisfied with the first bunch of heavier Cuisinart pans I bought, but I'm sorry I didn't buy All-Clad; They don't skimp. I won't use this Cuisinart pan for much more than boiling hot dogs or pasta; it's not going to control a simmer. I wonder if America's Test Kitchen knows about this. Very disappointed, and I will never buy another Cuisinart product again. Maybe I should go all cast iron . . .
