My Perfect Kitchen Pasta Machine
Follow Up and a Recipe
I just wanted to check in after using the unit to make a dozen batches of pasta. If your dough is of the correct consistency, this unit will roll and cut the pasta noodles perfectly. I recommend that you follow a simple recipe as you learn the machine:
1 Large Egg
3/4 cup all-purpose flour or 1/2 cup whole wheat + 1/4 cup all-purpose
I mix this by hand in bowl, and then knead on the counter. It will begin very dry but as you knead the components will come together. You may need to add 1/2 tsp or so of water to the dough as you need. It should end up being stiff and slightly sticky, but not sticky enough to stick to your hands/fingers. Wrap in plastic and let sit for 20-30 minutes. Remove from wrap and roll out slightly with a rolling pin. Then proceed to the machine. Works every time. As I stated in a previous review, the Perfect Pasta maker will produce perfect pasta. If it is not working for you, especially cutting through the dough to form noodles, the dough is not the correct consistency.

Works Great! Fantastic Value!
I had a more expensive version of this manual pasta maker (as well as a pricey electric pasta extruder). They have been loaned and lost! So, with my 20% discount card in hand I purchased this unit from BB&B and am happy to report that it works just as well as the model that costs two times more.
For my first batch, I mixed up four eggs, flour, salt, and olive oil in the food processor. Let it sit in the fridge for a couple of hours, broke off a piece and ran it through the machine (you always want to run a test batch to clear the oil off the inner workings). Turned out perfect. The key to great pasta from these machines is to run the dough through on the thickest setting. Then fold the dough in thirds and run it through again, several times. Then proceed from thick to thin.
The package includes an attachment that clips onto the back of the unit. The attachment has two sets of roller cutters to produce either fettuccini or spaghetti pasta. Keep the attachment rollers slightly dusted with flour to ensure the dough passes through without catching.
The clamp works great, and the rubber feet keep the unit from slipping. If using on a counter, you might have to open a cabinet drawer or door to properly access the clamp knob.
Can't beat the value, and it works as well as any other similar unit. My previous unit seemed to be slightly heavier (better made?) but I remember it slipping on the counter. Had to clamp it resting on a wet folded towel. Also, I purchased the other unit more than 30 years ago...

Follow the directions, make perfect pasta
I went to Bed Bath and Beyond with the purchase of a different pasta maker in mind, but our store was out of stock of that brand. The salesperson assured me that this was a good machine, so I decided to give it a try. When I got home, I looked up the reviews here and thought I might have made the wrong decision. But I gave the machine a try---FOLLOWED ALL THE DIRECTIONS CAREFULLY---and ended up with great pasta. If you are willing to do as the directions say and make a test batch first, you should have no problems. Don't let the poor reviews here worry you, I'm guessing those people decided to try to shortcut the process, then blamed the machine for the less than successful outcome they got. I have made several batches of pasta with this machine, and they have all turned our perfectly. Well worth the price.

I have owned this style of pasta makers for years. We bought this for our home in New England. The quality is first-rate and the price is a great buy.

Was leery purchasing this due to the mixed reviews. Purchased anyway. The clamp won't work on my table, but I can steadily hold it during usage. I floured often, in between each run through, and it never stuck. During cutting was the same result. Ease in the dial. I couldn't recommend this enough....both of the pasta connoisseurs and like myself, who has never used a pasta machine. Negative reviews regarding the dough: consistency pliability, etc., is a user complaint, not the appliance.

My parents have had this machine for over 30 years. I don't know if it's this brand but it looks exactly the same. I recently moved out on my own and wanted to get my own pasta roller. First of all yes, the dough will stick if you don't make it right and if you don't flour it enough prior to rolling. Yes grease DOES get on the first thing you roll, had people read the book it tells you to roll a piece of dough several times through the roller to get the grease off and then discard that dough. I also had a problem with the pasta sticking when using the cutter, however I adjusted the speed I rolled it through the cutter and floured it more and it was fine. All these bad reviews are from people who either lack common sense and/or didn't read the manual prior to using the machine
Bottom line is this is an excellent machine for the price, just read the manual and use a little common sense.

Good machine, Good Price
We have these machines at the culinary school I attend. I like the machine a lot, so I bought one. Very simple to use. Couple of things to address: 1. Don't bash the product if you didn't read the instructions. 2. Run a test batch through it and flour the rollers as well as the dough and you will get all the factory lubricant out. 3. Not a fan of the clamp but it's not hard to work around the short clamp.
The machine has a solid feel, cranks smoothly and firmly. My pasta comes out perfect with no issues. Can you screw up pasta with this machine, sure. If you do it's your technique NOT the machine. I noticed with this machine that the lower the number the smaller the pasta. Most machines I have used, is reversed.
Overall I would rate it 5 stars if it wasn't for the clamp. If you want a good pasta roller at a great price this is the one.
