Great cooking product
My mother cooked with cast iron products and everything tasted great. I am going to see if It will make me as good a cook as she was. So far everything I have cooked has been great. I intend to buy more cast iron products.

Must Have Pot
Cast Iron cookware is awesome.You must season it first and if not given proper care then reseason on occasion. I'm from the south and have grown up using these pots, I love them however do not put in dishwasher, hand wash & dry immediately, oil if necessary ( if seasoned well you don't have to oil after every wash) and do not cook tomato based foods in these pots because you will get a metallic taste and the acid will de-season the pot. Other than that, cook to your hearts content and love, love, love the flavors... Emeril won't steer you in the wrong direction when it comes to food, cooking or cookware!

Cast Iron Care is not rocket science
This is a wonderful cast iron dutch oven. Too bad for those who aren't familiar with proper care of cast iron cookware. Do NOT use any kind of soap - only hot water. Pots and lids need to be seasonsed initially, but with regular use and correct cleaning, the oils from cooking will season the pot. I would consider this a "must-have"piece of cookware - functional and versatile.

More than expected!
I bought this specifically for making cajun dishes. I brought it home, washed it and seasoned it according to instructions. Then I immediately started a pot of jambalaya. Now I know what gratin really is in the preparation of a dish I've been making in stainless steel pots for years. Not only will I be making gumbo and the like in this masterpiece, I will also be making many other types as well. This has instantly become my go-to pan. I highly recommend it to anyone!
