Copper pan can be used as a sugar pot or sugar boiler. The unlined pan is perfect for making sugar syrups, because copper is responsive to heat. This pan gives instant control while boiling syrup to just the right temperature. The acidity of the unlined sugar also causes some of the sugar to invert or split into glucose and fructose. This helps to resist the sugar's tendency to recrystallize. Sugar pan has a flat bottom so it allows sugar to melt quickly, and there's a lip on one side for easy pouring. Hand wash.
