I have purchased a lot of Calphalon products over the years, I love Calphalon. But this is not one of those products. I have noticed that about 1 person in 5 has a good experience with this. I found it to be the worst designed product ever. I watched several You Tube demos on this mandoline and others. I replicated all of their techniques. I tried all sorts of veggies. They all got caught and ripped on the V-shaped blade. I did not have one slice of anything that came out nice. Slicing cucumbers was the worst. In addition, slices from the harder veggies, like carrots and parsnips tend to get wedged under the bottom plate. Easily the worst kitchen utensil that I have ever purchased. I cannot believe that Calphalon would put their name on it.

DO NOT BUY - Worst kitchen utensil ever
This thing is totally useless. I cannot believe that Calphalon made this or even put their name on it. I do not know who performed the quality control, but it does not cut evenly. The veggies tend to get caught in the v-part of the blade. Worse yet, pieces of the harder veggies such as carrots and parsnips get caught under the bottom slide plate. At first, I thought that I was doing something wrong. I watched several You-Tube videos that demonstrate the Calphalon Mandoline Slicer, i used a lot of care to replicate their motions and technique. I could not get it to cut anything right. Onions, parsnips, tomatoes, cucumbers, all just as bad. The blade is just not sharp enough and poorly designed. DO NOT BUY this product.

Don't waste your money
I was so excited to buy a mandoline for homemade potato chips. I opted for the more expensive Calphalon over the cheaper OXO because typically Calphalon makes decent cookware. The first one I brought home had a giant gouge in the frame. It wouldn't have altered the cutting, but for $80 it shouldn't have a defect, in my opinion. So I exchanged it.
I am extremely disappointed in this product and will be returning it now that I have actually used it. Doesn't cut evenly and the slices are so thick - even on the thinnest setting - that there is no way they will ever be potato chips. More like potato hunks.
The waffle blade doesn't work at all. The slice falls through the blade before you have the chance to cut it a second time.
The protector piece folds in as you cut the veggie, and eventually you end up chopping up the rubber part of the protector with the veggie. Poor, poor design.
I don't think the blades are not sharp enough to use safely, you have to push so hard I think it is dangerous.
If I had paid $12 I wouldn't expect much. But for $80 I expected a bit more usability. It is a piece of garbage.

Great Product, Please READ THIS!
I am not a “review writer” generally. I don’t want to take the time. But I HAD to write a review for this product. If I had gone by all of the other reviews for this product I would NEVER have purchased it, but I do have a little OCD and ALL of my other kitchen things are made by Calphalon, and I love all of them. The OCD comes in because in spite of the reviews that I read, I bought this anyway so it was the “matching” piece to all my other utensils and I figured if it really was horrible I would return it. Ok, so it’s great! The blades are very sharp and they should be. I did cut my thumb, but it was my own fault. I wasn’t using the hand thing and I put my “cut proof glove” on the other hand and then switched hands without thinking about it. The cutting is easy and even. Because of the other reviews I read, I paid close attention. There were a few uneven pieces, but the unevenness was due to the shape of the vegetable and not the blade. Also, with the Julienne attachments, you do NOT need to separate the pieces once you’ve sliced them. When you put either Julienne blade in, you also need to layer it by putting the straight blade on top of the Julienne blade. People who said it doesn’t work must not have read the instructions or something (I didn’t either but it just looked to me like that was the way to do it and I was right). Also, for those who said it was a 3hour ordeal to take apart to clean – I also didn’t read the instructions, but using my brain, I was able to take it apart in under a minute, wash it and dry in in another 2 or 3 minutes and that was that. I mean, all these reviews really couldn’t be more wring about this product. I love it, and Calphalon has continued to keep me impressed with their products. Excellent, five stars, yadda yadda yadda. Don’t pay any attention to these other reviews. They are not accurate.
Just a few fun notes to the previous reviewers:

The item lacks appropriate safety warnings and specific instructions to protect users.” – OK, so you are using a mandolin. Mandolin 101 is that the blade is really frickin' sharp as heck. Don’t put your fingers near the blade. End of ‘Common Sense 101’.
“There really isn't a good way to clean it except to take it almost completely apart and then put it all back together to store.” – So, this is how I generally clean all my kitchen appliances. Food processor, I dismantle it to wash it. Blender, I take it apart to wash it. I don’t wash my pots and pans with the lid on, I take it off and wash it separately. Get my point? This reviewer claims to be proficient in the kitchen but is surprised at taking something apart to clean it?! Well enough said there. Ok, not enough said. This is the same person who says that the julienne blade doesn’t work and obviously didn’t put the thing together properly with the two blades and could figure that out. So, now, enough said.
“If you need an expensive item to help injure yourself, then this is the one for you!!!” – Oh boy, here we go again! Do you know what it is you purchased when you purchased a mandolin? It’s not a Barbie Doll, it isn’t an iPad, it’s a SHARP INSTRUMENT! All mandolines should be! Jeez!
Removing upper platform for cleaning necessitated calling the company for support. It took them several tries to make it work & explain to me that the dial labeled "Remove to Clean" needed to actually be turned PAST the labeled mark...way past in order for the upper platform to be removed for cleaning. Who would have known? – I KNEW!!! I KNEW!!!! I moved the dial in the direction that had an arrow and said something like turn the dial to here to remove the thing to clean it” or maybe a more concise version of that sentence. I did that. Lo and behold, it worked! My stars! I was worried about spending hours on hold with Calphalon to figure this one out after reading this review. Luckily, I took Common Sense 101 (above) and it paid off!
