What is the difference between a light colored and dark colored surface on my bakeware?

Lighter colored surfaces will reflect the oven heat, allowing for more even browning. Darker surfaces absorb the heat, so you may need to reduce the oven temperature a bit when using darker surfaces.

What is an insulated cookie sheet?

Insulated bakeware is made of two bonded layers of metal with a layer of air in between. The layer of air allows for even baking and browning without burning.

How many cake pans do I need to bake a cake?

Most cake recipes and boxed cake mixes will make two layers. If you are using an 8" or 9" cake pan, you will need two pans so both layers can bake at the same time.

What tools and accessories do I need to prepare and finish a baked item?

Some great preparation tools include mixing bowls, measuring spoons and cups, spatulas, whisks, pastry blenders, flour sifters, pastry cloths, rolling pins and cookie cutters.

For baking, parchment paper or a reusable silicone baking liner to place on baking sheets helps with clean-up, a pie crust shield keeps the crust from burning, and for cooling, wire cooling racks are essential.

Some helpful finishing items include an icing knife, pastry/icing tips, a cake stand, and a cook's torch for browning sugar and other toppings.
