Look for the HEAVY-DUTY models that can handle many more ingredients while performing the heaviest tasks like kneading dough. A heavy-duty mixer will have a powerful motor, durable construction and will come equipped with a work bowl with at least a four-quart capacity. These models allow for large batches to be made at once.
Heavy-duty models also include many more speeds and provide a broad variety of mixing functions. Just select the precise speed for your cooking task. Some models come with an "Electronic Mixing Sensor" that automatically adjusts to maintain precise control. Also look for a "soft start" feature which slowly increases the speed of the mixer to prevent ingredients from splashing out of the bowl.
A great feature is PLANETARY MIXING ACTION, where the bowl remains stationary while the mixer rotates completely and thoroughly around the edges of the bowl. With this feature, you don't have to constantly use a spatula to manually scrape the ingredients back into the bowl. Also look for HEAD LOCK, which secures the mixer head when in use preventing the mixer head from bouncing around and splashing out ingredients.
