What does conductible metal mean?

This is metal that distributes heat rapidly and evenly, which is why it is ideal for cooking.

Does the surface of non-stick cookware scratch off?

Better quality cookware will be layered with a more durable non-stick finish, protecting the surface against wear and tear. Non-stick surfaces may be scratched with metal utensils, so try silicone, wood or plastic instead.

Can I mix and match non-stick and regular cookware?

Absolutely. It's great to have a diverse collection to meet all your cooking needs. Every kitchen needs a non-stick fry pan and griddle to complement the more traditional lines of cookware. In fact, you can mix anodized aluminum and stainless cookware based on your cooking needs as well.

Do I need to buy a set of cookware?

Of course not, but if you're just starting out it may be the simplest and most economical approach. Check the price points because it will be cheaper to buy a bulk set instead of individual pieces. There are many different types of sets, so see which would best suit your cooking habits.

What are the basic pieces of cookware to get me started?

You need these basic pieces:

What is the difference between aluminum and hard-anodized aluminum?

Since pure aluminum is reactive and very porous, it will not be used as a cooking surface. Instead, it is layered between non-reactive metals, most commonly stainless steel and copper. The anodizing process makes aluminum harder, darker, more durable and less reactive to food. Anodized aluminum is non-porous and is a very conductive cooking surface. It won't chip, peel or crack and can be recognized by its charcoal color.

Does a heavier pot necessarily mean a better pot?

The better lines of cookware will be heavier. This will always be a good thing. Remember, you're not going to be carrying the pot down the street - the weightier the pan, the more stable and safe it will be on your stovetop. This is very important, as lightweight pans can warp.
