And baking is great way to engage the kids—from choosing and finding recipes, to measuring and mixing ingredients, to kitchen cleanup, to feasting on the results. Tip: Bring a baked treat or an Easter basket to a neighbor who could use a little sweetness.

The possibilities are endless. Serve one or two savory selections and some muffins with a simple green salad or fresh fruit (or both), and you have a festive feast. Fast.

For instant guest-appeal, wrap anything in puff pastry. Frozen puff pastry is easy to find at the grocery store. (You usually have to thaw it overnight in the refrigerator, but check your package for specific instructions.)

For our Easter brunch, we cut the puff pastry into squares, layered each with sliced prosciutto, a knob of brie cheese, and a few spears of fresh asparagus, then folded and tucked in two ends and gave each bundle an egg wash before baking. Serve these delectable pastries—or your custom twist—straight out of the oven or at room temperature.

Think of it as a baked omelet, but even easier. Because, unlike omelets, this egg dish can be prepared entirely in advance. For this festive frittata we combined roasted red and yellow peppers, halved boiled baby potatoes, and a combination of grated Oaxaca and parmesan cheeses with eggs in a square glass baking dish and baked until golden brown. Serve it right out of the oven or cool, slice, and serve it the next day at room temperature on a platter.

Note: If roasting peppers feels like too much work, pick up a jar of roasted peppers in the supermarket. Or improvise with other ingredients. Just about anything you would use in an omelet has the potential to make a fine frittata.

lemon muffins with raspberries

A pop of color and a tart berry burst instantly elevate homey muffins. Make your favorite muffin recipe or mix, and add two or three fresh raspberries to the crown of each muffin before baking. We think lemon’s elegant, but plain vanilla is just as delicious. If you don’t have raspberries, blackberries or blueberries are great substitutes.
