Spring Brunch Recipes

Spring is in the air, and it should be on your table as well.

Something about longer days and warmer weather makes the idea of a long Sunday brunch outdoors with friends and family sound particularly appealing. (To be fair, we also feel this way about cold weather. We just love brunch!) And with the new season comes tender new produce and a whole new set of recipes. Here are some that we’re loving right now.

Creamy Scrambled Eggs with Crème Fraiche & Smoked Salmon

This protein-rich recipe is the perfect mix of indulgent and easy to make. The dill crème fraiche is the secret weapon that makes it feel fancy, but the scrambled eggs are super easy; the croissants can be store bought; and the whole thing comes together with under 10 ingredients. If you’re having people over or are just feeling posh, you’re going to want this on your table.

Apricot Ginger Toasted Oat Scones

These scones are sweet, just a bit spicy, and go perfectly with your morning coffee, especially when consumed outside on a sunny day. A food processor keeps the prep time short, and they only take 15 minutes to bake.

Pro tip: Make a big batch of these and freeze them to be eaten all season long! That’s if you’re able to save any for later.

Kale, Avocado & Apple Smoothie Bowl Recipe

For those of you who prefer eating your smoothies, might we interest you in this bowl version? It’s a great way to get your greens in, and since it mostly tastes like apples, it’s not a bad way to get your kids to eat kale either.

Orange & Ricotta Pancakes with Blueberry Syrup

Level up this brunch staple with one of our all-time favorites that tastes like you worked really hard, even if you didn’t. The pancakes come out super-delicate, and the orange and ricotta combo makes them feel special. Top liberally with homemade blueberry syrup, and you’re winning brunch.

Creamed Spinach Filled Crepes Baked with Cheese

Here’s a step by step method to getting even your most carnivorous friends to ask for more spinach:

  1. Mix with a bunch of cream cheese, garlic, and shallots.
  2. Stick it into a crepe.
  3. Cook.
  4. Top with more cheese.

You’re welcome.
