Shaved ice, sometimes called shave ice, is a great foundation for just about any sweet fruity mix. This Papaya-Lime Shaved Ice is quick and easy to make, and the basic method works with just about any ripe fruit and citrus combo. Summer is long and hot, so we’ve included a couple of other suggestions for shaved ice toppings.
ingredients
¼ cup warm water, plus more as needed
2 tablespoons honey
1 small ripe papaya, peeled, seeded, and roughly chopped
2 tablespoons lime juice, plus very thinly sliced lime, for serving
6 to 8 cups shaved ice, prepared in a shaved ice maker
instructions
Combine warm water and honey in a blender and blend until honey is dissolved. Add papaya and lime juice and continue blending, adding water by the tablespoon as necessary to create a pourable syrup.
Transfer mixture to the refrigerator and chill until cold.
Divide the shaved ice among serving bowls. Top with papaya syrup and garnish with lime slices. Serve immediately.

cantaloupe shaved ice with moscato d'asti and tropical fruit
Blend 3 cups ripe cantaloupe, 2 tablespoons sugar, and a pinch of kosher salt in a blender and strain through a fine mesh sieve. Pour over individual servings of shaved ice, add a splash of Moscato d’Asti or other fruity wine, if desired, and top with diced fresh fruit such as cantaloupe, dragon fruit, mango, kiwi, and raspberries. Makes 6 to 8 servings.
red bean shaved ice with coconut and mint
Combine 1 can (15.5 ounces) red adzuki beans, ⅓ cup sweetened condensed milk, ½ teaspoon vanilla extract, and a pinch of kosher salt in mixing bowl and stir together, mashing beans with a fork to break them up. Spoon over individual servings of shaved ice and garnish with mint, coconut, and a light dusting of freshly grated cinnamon. Makes 6 to 8 servings.
