Pisco Sour Cocktail Recipe

This trendy cocktail has its origins in Peru and Chile. The egg white adds body and a foamy head to the cocktail. As it gains popularity in the U.S., Pisco is becoming easier to find in liquor stores. If you can’t find it, substitute grappa.

Ingredients

1 cup ice cubes
1/4 cup fresh lime juice
1/4 cup Pisco
3 to 4 Tablespoons sugar (depending upon your preference for sweet vs. tart)
1 Tablespoon liquid pasteurized egg whites

Put ice, lime juice, Pisco, and sugar in blender and blend until smooth.

Add egg white and blend until frothy.

Pour into 2 glasses and let foam settle to the top. Garnish with a few drops of bitters and lime slices.

Notes

This recipe makes 2 servings because the ingredients fit into a typical blender. If serving a crowd, simply make a few batches and pour into a pitcher.
