Taco Tuesday just got a little zestier with these lime-drenched shrimp tortillas.
Ingredients
2 tablespoons olive oil
1 large red onion, thinly sliced
1 pound medium shrimp, peeled and deveined
Kosher salt
Small corn or flour tortillas
Taco Toppings
Sour cream
Avocados
Thinly sliced red cabbage
Radishes
Hot sauce
Jalapeños
Scallions
Cherry tomatoes
Cilantro
Rice
Beans
Lime wedges
Instructions
Heat olive oil in a large cast iron skillet over high heat. Add onions and shrimp, season with salt, and cook, stirring occasionally, until shrimp is just cooked through, about 4 minutes.
Remove shrimp to a plate and continue to cook until onions are starting to turn golden, about 4 minutes more.
Heat another cast iron or other pan over medium high heat. Add tortillas and cook until lightly charred and flexible.
Stack tortillas and wrap in foil to keep warm. Assemble tacos with accompaniment of choice.
