Summer Refreshing Cucumber Salad Recipe

"This is a very versatile little salad. It’s quick to whip up and can be served with just about anything: grilled salmon, chicken, steak or our grilled Thai sweet and spicy pork chops."

Ingredients

1 pound small cucumbers, scrubbed and cut into 1/4 inch dices

1 small red onion, cut into quarters and thinly sliced

1 red chili thinly sliced, seeded if you want it to be less spicy

4 Tablespoons cider vinegar

1 Tablespoon sugar

1/2 teaspoon salt

Pepper to taste
