So refreshing on a hot day! You can serve it as a light dessert or as a palate cleanser between courses. Or serve as an appetizer/cocktail by serving in a martini glass and drizzling with watermelon vodka.
Ingredients
Granita
6 cups cubed ripe seedless watermelon
2 Tablespoons fresh lime juice
3 Tablespoons sugar
1 1/2 teaspoons grated fresh ginger
Garnish
Small watermelon wedges and/or mint sprigs
Instructions
Puree watermelon, lime juice, sugar and ginger in 2 batches in a blender.
Pour into a 9-inch metal baking pan and freeze 1 hour or until slightly frozen around edges.
Remove from the freezer and stir with a fork. Return to the freezer and stir every 30 minutes until set but still granular, about 4 hours. Serve or cover pan with foil and freeze up to 1 week.
If granita has frozen solid, break up with a fork or pulse in a food processor until granular. Spoon into glasses and garnish with watermelon and mint sprigs.
