Do-It-Yourself Fajitas Platter

Ingredients

Steak and Vegetables

¼ cup plus&nbsp;2 tbsp&nbsp;olive oil, divided

Juice of 1 lime (about 3 tbsp)

1 tbsp finely chopped garlic

½ teaspoon ground cumin

1 tsp salt, divided

2-pound flank steak

2 large red bell peppers, cored and quartered

2 large poblano chili peppers, cored and quartered

2 large onions, cut in thick slices

Guacamole&nbsp;

2 medium avocados, peeled and pitted

¼ cup chopped cilantro

2 tbsp&nbsp;chopped red onion

2 tbsp fresh lime juice

½ tsp salt

¼ teaspoon ground cumin

Few splashes hot sauce

Accompaniments&nbsp;

8 flour tortillas, heated according to package directions

1 cup sour cream

1 cup crumbled queso fresco or shredded Monterey Jack cheese

Everything You Need to Make Soup in Minutes

If it were up to us, we’d rename the seasons Ramp Season, Grilling Season, Pumpkin Season, and Soup Season. Actually, is there a Department of Seasons we can go to to talk to someone about that? We think those names are soup-endous.

There’s really no season when soup isn’t delicious, but this time of year we go big. There’s just nothing like a warm, nourishing bowl of soup on a brisk day. Soups are healthy, they tend to be pretty easy to make (and hard to mess up!), there’s a ton of variety in the category, they freeze well, and of course, they’re really delicious. We could definitely go for a bowl right now. And when you need a bowl of soup stat, you need the right tools. Here’s what we’re using to pull together soup fast.

Pressure Cooker

It’s likely no soup-rise that a pressure cooker tops this list. (And with that, we’ll be done with the soup puns.) For the unfamiliar, a pressure cooker cooks food very quickly, as in minutes. Two of our favorite examples are the Instant Pot® and the Ninja® Foodi™ Pressure Cooker with TenderCrisp™. You can use them to make big batches of your favorite soups, perfect for serving to your family or guests, keeping in the fridge to eat all week, or for freezing for later in the season. And they’re seriously fast. You can create soups from dried beans in about 40 minutes—without soaking them. If you’ve ever cooked with dried beans before, you know that’s like souper-hero status (gotcha!).

The Instant Pot® is more compact and has nine different functions. You can use it as a pressure cooker, a rice cooker, a slow cooker, and more. The Ninja Foodi™ is great because it’s also a crisper and air fryer. It’s larger than the Instant Pot®, which you should be aware of before you buy, especially if your kitchen has limited space. Both are perfect for soups, so you can’t go wrong!

Blender

For pureed soups, turn to a blender. Some of our favorite varieties are butternut squash, split pea, and tomato (eat those veggies!). If you have a traditional blender like a Vitamix®, put in all of your ingredients (pre-cook any vegetables that need it) and blend. On the highest setting on the Vitamix®, this should take about six minutes.

An immersion blender is another space- and time-saver for soup lovers. Simply cook everything in a pot, and once your veggies soften, use the immersion blender to puree it all into a lovely finished dish. Be careful with your pots when using an immersion blender, as the blades can scratch your cookware. If using the immersion blender in a nonstick pot, which is not recommended, be sure to avoid touching the sides of the pot.

Food Processor

A great soup is really, really easy to make… once your ingredients are prepped. And prepping your ingredients can take a while, even if you have good knife skills. That’s where a food processor can be really helpful. Chopping onions and all of your other veggies becomes quick work when you can slice or dice large pieces of food in seconds.

Grocery Store Hacks

When you just don’t have the time, the grocery store is there for you, saving the day. Here are some of our best hacks and favorite finds:

	<li>Trader Joe’s sells a container of pre-chopped mirepoix. Mirepoix is a combination of carrots, onion, and celery, the ultimate soup-starter.</li>
	<li>Many supermarkets sell pre-chopped veggies, like peppers, broccoli, cauliflower, onions, and all kinds of squash. Some even specifically sell vegetables for soup, already made into kits. This can save about 20 minutes of prep time, which on a weekday can make all the difference.</li>
	<li>If you’re struggling in the produce section, don’t be fooled by labels. A platter of crudités is really just soup waiting to happen. The washing, peeling, and a lot of the chopping has been done for you. Use the vegetables you don’t put in the pot for salads and snacks.</li>
	<li>Many stores sell pre-cooked lentils. These are great in vegetarian (or not vegetarian) chili and, of course, lentil soup.</li>
	<li>We mentioned dry beans above, but the canned versions work just as well, and in much less time.</li>
	<li>If you don’t have a bunch of homemade stock on hand, don’t panic. Buy a good boxed version and add to it. Onions and garlic make everything better, and fresh herbs add a next level to any pot!</li>

At last! A dessert for those of us who understand whipped cream’s rightful place in the food pyramid. It’s not just a topping, it’s the tops. That’s why whipped cream is the star of this low-effort, high impact, and endlessly variable treat you can serve at a brunch buffet, a romantic meal, or even a weeknight family dinner.

Your serving surface will give you a sense of what, and how many, ingredients are required. Stylish cheese boards like these add visual appeal and may even inspire a minor dairy masterpiece. Imagine the quiet drama of a white marble board with drifts of whipped cream, pale meringue kisses, and creamy white chocolate as a backdrop for fresh fruit and berries. Your everyday cutting board will work perfectly too if it doesn’t smell of onions and garlic. You can even use a cookie sheet covered with baking parchment as your canvas. Just be sure it’s sturdy.

Nothing beats fresh homemade whipped cream flavored with vanilla extract. Except, perhaps, fresh homemade whipped cream flavored with peanut butter, fresh berries, or even Grand Marnier liqueur, if you’re feeling fancy. A sturdy pre-whipped topping from a tub will do in a pinch, but avoid spray whipped creams. They won’t hold up. Put your whipped cream in a few small bowls or spoon it directly onto the board in appealing mounds.

Now that you’ve laid the foundation, have fun building your board. Look for bite-size finger foods that go well with whipped cream and with each other. Not only do fresh berries and grapes taste great, but they will also look amazing for hours on a buffet. Apples, pears, and bananas may be delicious, but they tend to discolor and become unappetizing if not consumed quickly. Dried fruits are a great choice: apricots, kiwis, prunes, and craisins will sparkle like gems. For crunch, add cookies, candies, and nuts—either salted or candy coated. Arrange it all artfully on the board and serve. Be prepared for the chorus of oohs and ahhs.
