A Hearty, Almost-Instant Soup to Fill You Up

Fall soup doesn’t have to be a long-simmered affair—thanks to canned beans, rotisserie chicken, and store-bought broth, you can make a stellar one in just minutes. Pack it up in a thermos, and if you’re feeling fancy, go ahead and top it with some grated parmesan—or even a dollop of pesto—before you dig in.

Stir 1 cup chicken stock, ¼ cup shredded rotisserie chicken, ¼ cup canned white beans, and a big handful of torn kale in a small pot. Simmer over medium-low heat for a few minutes until the kale has softened. Pack into your favorite container, and heat up at work. Sprinkle with grated parmesan before serving or stir in a scoop of pesto.

A hearty slice of sourdough bread (or your favorite roll) really takes this into rib-sticking territory, and a combo of a sliced apple with a few scoops of almond butter is a seasonally appropriate, protein-packed way to cap off this classic fall lunch.
