Cooking time is faster and after you place them in the oven, you can check the doneness of the legs and breast separately. This allows the meat to brown and cook more evenly. You can remove the individual pieces as they are done and place them on a platter allowing the skin to crisp and the meat to reach the perfect, juicy 165° F.
