Getting used to the set. They have very even heat and my first cook was sticking all over. For my second cook i preheated the pan to the water bubble test then added my oil then the food. Resisted moving the chicken until it got browned. With that the result was perfect. Getting better and better! Highly recommend these professional pans.

I have a few pieces of AL Clad and if money wasn't an issue (retired, fixed income and almost $6:00 a gallon heating oil) I'd have a complete set plus accessories. If you're having issues, it's not the pans fault. Stainless steel is not Teflon. Heat the pan gently , bring to temp of what you plan on cooking, add your meat, sear, both sides, then reduce temp. finish the cooking or recipe. As far as stainless steel pitting, it's because people get in a hurry, when boiling water, bring to a boil before adding salt, when the salt lies on the bottom of a pan and is heated, it creates a chemical reaction and causes the pitting. The blue or yellow discoloration is from over heating, it's not the products fault, all metal will change if heated too high. It's basic cooking skills, cook like your great grandma, pans and pots last longer , food tastes better and clean up is much easier

I love my copper core cookware - it’s so beautifully made, it heats extremely evenly and it’s incredibly responsive to slight changes in the temperature of burners. It’s easy to use and just as easy to keep clean and gorgeous! I had to make a few simple changes to get the most out of the set - like always pre-heating a pan before adding anything, even oil, and letting a pan cool, then soak, for quick clean up. I find it works even better than nonstick cookware when it’s used properly.

I had a mis matched set I had been cooking with for years and now I have a proper set of cookware. I also added the pasta pot and a second sauté pan. Love it so far. Can’t believe how quickly copper heats and cools and it’s very even; no hot spots.

I bought this has a first year anniversary gift for my daughter and son-in-law word has it THEY LOVE THEM!!!!!!!!! It was a perfect gift for them because they just love to cook and really didn't have good pans to cook in so now they are enjoying their passion even more.

This is the best set of cookware I’ve ever owned! Who knew what happiness you could put in a pan. The best part is I can fish something off in the oven just like a high end restaurant.
