I own the 12", 10" and 8" pans. All of them are great All-Clad quality. They are all copper core, but the copper core of the 12" pan sets it apart from all the rest. The copper core provides a temperature difference from the center to the edge of just about 50F on a convection range eye. I make 3" pancakes and that even temperature is essential for quality cooking -- they all get done at the same time. That even temperature is a God send for large meat and fish. I can lay a large fish across the center of the pan and cook it from end to end without any trouble. I had to learn how to cook with stainless steel without sticking. After the learning process nothing sticks except fried cornbread -- I still working on that. Normal clean up is simple. Meat and such will leave "font" patches on the pan. DO NOT WASH IT WITH SOAP AND WATER. Just deglaze the pan like the French do to make a fine sauce, but just use water. Put some water into the pan, bring it to a boil. Then using a part of a paper towel held by tongs, scrub around the pan. Everything will release from the pan, and you can pour it all down the drain. Then dry the pan and it is clean as new. After a long time use All-Clad Stainless Pan Cleaner to remove anything left in the pan. This is a very seldom necessary step. All of these comments apply to all three size pans. They are insanely expensive, but you only need to buy them once in several lifetimes.

Beware using with Induction Cook tops Thomas ·

I bought a Wolf induction cook top and so I went out and bought a top of the line cookware set - All-Clad's Copper Core 10-Piece set. All-Clad stated that t set was "Compatible with all cooktops, including induction" but I soon learned that they were not compatible. The combination of copper and stainless steel overheated the cooktops "burners" and result in the stove to shut-down one of the burneers to prevent over-heating and damage to the cooktop. The technical service representative at Wolf said not to use pots and pans with different layers of metal. So, here I am with a very expensive 10-piece set cookware set that I cannot use on my induction cooktop.

USA-made, always the best overall! My stove-top is not the ideal and have to switch from one burner to another to find that sweet spot when cooking from high heat to low heat or vice versa. USA-made All Clad products (I own a few, not specific on this sauce pan alone) helped with that issue because the materials and design of the products heat up the food evenly.

The size of this pan is amazing to spread out food and be able to cook for a larger group. It perfectly sears meat without sticking and the heat is so evenly distributed. It's an amazing workhorse of a pan.

Getting used to the set. They have very even heat and my first cook was sticking all over. For my second cook i preheated the pan to the water bubble test then added my oil then the food. Resisted moving the chicken until it got browned. With that the result was perfect. Getting better and better! Highly recommend these professional pans.
