This tool is so sharp, smooth, and easy to use that it sliced off the top of my finger without any effort. Yes, that is not a joke. Obviously it was my own fault but the mandoline also sliced potatoes, tomatoes, onions, cucumbers, zucchini, and other things so cleanly and easily that at first I thought it couldn't be working - it was so easy. Potatoes for a huge amount of scalloped potatoes and potato salad took just a minute or so. But seriously, get a glove. I always use very sharp knives without cutting myself but this thing got me good. I'm a little afraid of the blade right now but it is too great a tool not to use again. Although I will definitely get the glove first...once my finger heals.
Overall this mandolin is fine for the money, If you want a slice thats thinner on one edge and thicker on opposite edge. I read the previous review about that and figured the reviewer was using it incorrectly or not exerting the proper pressure, etc... I tried to make the ridge/crinkle cut potato chips and ran into the exact same problem. My wife and I tried every possible way to slice a chip, different pressures, widths, taking blade out and replacing, etc... Nothing would stop the thin to thick slices. The only slice that would come out even is the thinnest slice setting, and that still seemed to be 50/50 if you sliced slowly with a lot of pressure. Anything larger would have a slope. This problem creates uneven cooking/frying! chips would become crispy burnt on thin edge while undercooked on thick. Boxed it up and returned it to the store. spend a little more and get better quality!

I've had this mandoline for a number of years now. First, it's pretty good at it's basic job - slicing in controlled thcknesses. I say pretty good because I have also experienced problems with variations side to side - usually when working slowly or in dense material. Worry - the blade might not stay sharp, and will eventually happen. The V-blade seems hard to sharpen. Fortunately, I can't tell you whether it's a real problem because mine is still sharp! Issue: The plastic construction. It discolors over time. That's only cosmetic BUT the deck flexes. The little V insert seem the worst; it doesn't anchor solidly. Perhaps a metal deck and insert would preform better. Design-wise I often wish for more step on the thickness dial the difference between the thinnest and the next thinnest can be considerable. At the other end, you can't make full-size fries with it. Overall, though. It's worth the money. Even recognizing it's shortcomings now, I don't regret the purchase. It can make kitchen life so much easier. Overall,
With the discount I got I'm fairly satisfied. Being mostly plastic it feels kind of flimsy to me when I'm pushing sweet potatoes through the wavy blade on the highest setting for example. The base you slide it on seems like it could be more substantial, but then again it is just plastic so.... An all metal mandarin is probably 50% more money so... For the $38 I paid w/discounts, I'm pretty satisfied. I personally found the directions good enough. If you look the product over for a while and mess with it a bit carefully, it isn't all that difficult to figure out how to work it....easily. The blades that store underneath are not that hard to remove and re-insert. There's a couple of tabs you need to press in, and then they lift right out. I had no problem at all with that once I messed around with the whole unit for a bit to get used to it. Keep it in the LOCK position while playing with it and you won't cut your fingers. You need to be careful...what does anyone expect is going to happen if youre not?? Blades are razor sharp, the way you want them to be. Not a bad unit...I'm satisfied enough,
The mandolin was designed perfectly storage of the blades etc. a well put together item wide variety of thicknesses which is exactly what you want in a mandolin.
Just got this product, it looks good and appears to be easy to work with - not really! First the instruction book is not very clear or accurate - you need to go to a really good You Tube video to get enough info to actually figure this thing out. But, as simple as it looks, trying to remove blades, get them out of the hidden storage and clean and replace them into the frame is hard to do and dangerous, it actually requires pliers to remove and replace blades. Cleaning is also dangerous, because you have to carefully handle the blades. Will return this one and buy the more expensive OXO Chef's Steel mandoline with simple removeable and simple adjustable blades. Don't buy this cheap plastic complicated dangerous contraption!
This is my second mandolin and somehow this one is more difficult to work with. Tried following the instructions to change the blades……hopeless. Maybe I had a mental block. Will be returning as I’m not comfortable with it. Blades are extremely sharp though.
No directions/handbook. I wanted to use it so badly, I printed them from the website. It takes so long to get the plastic pieces assembled, I might as well get out my food processor! Half of the time the plastic pieces don’t want to align. I’m returning it tomorrow!!!!
Got for gift giving . Appreciated
A bit difficult to use and to set up. I think it is too complicated.
