This knife is so sharp and will slice through anything with very little effort. I definitely baby this knife and for this kind of investment, you really should. I know that it's pretty common knowledge but NEVER put it in the dishwasher, it says "dishwasher safe" but it's just not good knife care. Even Shun's website says "Dishwasher safe but hand washing is recommended". I have an amazing 8" chefs knife that works well on the same type of tasks that the santoku tackles but I reach for this one every time. After purchasing this knife, I switched all of my knifes to Shun.

Great knife, except food sticks to it as you are slicing which is annoying. I've had it a year, but then the blade chipped while I was cutting squash, so I am unable to use it anymore. Hoping I'll be able to exchange it.

What a dream to work with. Even though it is made for a lefty you would be out of your right mind not to give this knife a try. Excellent balance and effortless knife edge. Metal seems to be more on the brittle side so use it for your prep work and not on meats with thick bone.

I'm in the process of converting all my Germans (Wusthof, Zwilling/Henckles) to Shun and wish I had done it sooner. Don't get me wrong - I have some of the highest quality Germans made and they have served me well for a long time, but I started getting serious about my cooking and upgrading my kitchen program after buying this santoku(which was on sale and much cheaper than a similar Wusthof) and loved it! Much lighter, the VG Max steel is much harder than German steel (meaning it can be sharpened to a much finer point and hold it longer). Shun bevels at 16 degrees vs 22 degrees for most Germans. More importantly, less hand fatigue from lighter weight and ergonomically correct "D" shaped handle. The better designed bolster/tang allows proper use of the pinch grip, which you can't do with Germans without slicing your knuckles to shreds. I never realized how poorly the Western/European handles were shaped on the Germans until I switched. I personally think they are much more attractive as well, the Pakkawood handle on Shuns is beautiful and functional. The hollow ground (granton) spaces on the blade do help to resist some food sticking to it, although not as much as advertised. German steel is "softer", meaning it can take more abuse and will flex more, but needs to be sharpened much more frequently (I had to sharpen at least once every couple weeks). I've had my Shun for a few months and it's still as sharp as it was at first. Cutting through food or veggies requires no effort due to the sharpness of the blade, a proper slicing/cutting motion does the work for you and also encourages proper technique. I've tried other Japanese knives (Miyabi Kho and others), but keep coming back to Shun. Their knives are the sharpest, the VG Max just seems to outperform the FC61 (Rockwell scale hardness=61)steel most others are made of. I have a Kramer/Zwilling Meiji 8" chefs knife which is a work of art, but use the Shuns more often as they are sharper. The Kramer is great for some things with food prep, but the Shuns do it all! Well worth it for the price point, I'm enjoying the $1000s I'm spending converting over to them. Definitely worth a try. FYI not to advertise, but I do like Sur La Table because you can experiment with the knives in the store before you buy. Once you do, BBB often has sales and you can use the 20% discount in stores (but not online).
